Who are Two Many Chefs?

Behind this name are Carlos Medina and Toni Soriano, professionals with extensive experience in the kitchen who bring technique, ingenuity and a fresh approach to every recipe. Their work consists of reinventing traditional Mediterranean dishes while respecting the raw ingredients, adding touches of creativity and details that make every bite a special moment.

Their ‘gastroesmorzaret’—featuring gourmet sandwiches like the ‘l’ast’ roast chicken with potatoes—is a true tribute to the Mediterranean.

It might seem like an unusual combination, but once you taste it, you’ll forget all about tradition and find yourself fighting over the very last anchovy on the plate.

For now, the finest ones he has tasted to date—though there is still much ground to cover—are those from Bar Viciano in the Dénia Market, and Alenar Bodega Mediterránea in Valencia’s city center. In the latter, they are served as round patties, halved inside a sandwich with baby broad beans and garlic mayonnaise.
